These Funfetti cookies are the best! Seriously- what could be better than delicious 3 ingredient cookies that are as easy to make as they are to eat? đ Oh, I know! 3 ingredient FUNFETTI cookies⌠thatâs what! đ
My mom used to make these when I was young & now I make them with my kids.
No, they arenât on the âhealthy cookieâ list, but letâs cheat just today... shall we?! These cookies will take you hardly any time to make and they are fun to make (your kids will agree!) They are a favorite of mine and they are so simple!
What ingredients are in these Funfetti 3-ingredient cookies?
- 1 box of Pillsbury Funfetti cake mix
- 1/3 cup oil
- 2 eggs
- Optional: Can of frosting.
I love that this recipe does not call for brown sugar, all-purpose flour, baking soda, baking powder or granulated sugar. Itâs just so simple! (Not saying that itâs low in saturated fat but itâs easy & delicious, so today calories & fat donât count. ShhhhâŚ)
Now you can see why I love this easy Funfetti cookie recipe! Who can say no to 3 ingredient cookies (or any 3 ingredient treat)?! This is a simple recipe to turn to when you need a rainy day activity for the kids and you know everyone could use a pick-me-up in the afternoon.
I just canât get over how simple this is. You donât need to worry about chilling the dough â room temperature is fine here! This is also a great recipe if you want to get creative :
- Try a chocolate chip version
- Throw in some vanilla extract
- White cake mix with almond extract
- Or add some dried cranberries for a delicious grown-up version of this cookie
- I recently learned that Pillsbury also makes a gluten-free Funfetti cake mix, so you could try that, too!
How do you make 3 ingredient Funfetti cookies?
I start out by preheating the oven to 375°F. While it is preheating, I start mixing the cake mix, oil & eggs. Just mix them or stir until it is moistened. Do not over stir.
Next, you will roll the dough into 1-inch balls & place them about 2 inches apart on an UNgreased baking sheet (I like to cover my baking sheet with parchment paper for an easy clean-up, but this is optional).
A fun way for kids to help make the 3 ingredient Funfetti cookies
I let the kids do this next part â flattening the cookie balls. Just take a small drinking glass and dip the bottom in flour. (I put flour in a bowl to make this part easier).
Now you will push the bottom (flour-covered) part of the glass onto the dough balls to flatten them just a little. You want to flatten to 1/4-inch thick.
Put them into the oven, but you only want to set your baking time for around 6-8 minutes, until they are a very light golden brown color around the edges.
Once you remove them from the oven, let them cool for about a minute before removing them from the cookie sheet.
Are you ready to frost your cookies?
This is optional, but our kids love to decorate the cookies with frosting & extra sprinkles. I let them use food coloring to color the icing whatever color they want (you can easily turn this into a science experiment mixing colors together).
TIP: I usually get the icing & put it into several different bowls for the kids. They pick how many icing bowls they want and they add their own food coloring to the bowl. They can create a new color or stick with the color that the bottle shows.
Once the cookies are cool enough, start spreading the frosting onto the cookies (I like to add it while they are a little warm, so the icing melts just a little bit). If you are adding sprinkles, add them immediately so that they will stick to the wet icing.
TIP: Let the frosting set before storing.

Funfetti Cookies (Only 3 Ingredients!)
These cookies will take you hardly any time to make and they are fun for your kids to make them! They are a favorite of mine and they are so simple!
Prep Time: 10 minutes minutes
Cook Time: 8 minutes minutes
Ingredients
- 1 box of Pillsbury Funfetti cake mix
- 1/3 cup oil
- 2 eggs
- Optional: 1/2 can of frosting
Instructions
Preheat oven to 375°F.
Mix the cake mix, oil & eggs.
Stir until moistened.
Roll the dough into 1 inch balls & place them about 2 inches apart on an UNgreased cookie sheet.
Take a drinking glass and dip the bottom in flour. Push the glass onto the balls to flatten them until they are 1/4 inch thick.
Bake for 6-8 minutes, or until the edges are golden brown.
Cool about 1 minute & remove from the cookie sheet.
